Eye: Orange honey. Thick rim bleeds and holds syrupy droplets.
Nose: Sweet and fruity, but the PX doesn’t overpower the bourbon. Dried fruits and lovely spices.
Palate: Spice quickly fades to vine and red fruits. Charred wood, spice coats the mouth. Almost tastes more like an Oloroso finish than a PX. Back-of-the-throat clove, then strawberry and a concentrated dark fruit flavor, like fig fruit leather that borders on turning savory. Some semisweet chocolate with air. Mouthfeel is coating, a little tingly on the tongue with a medium body.
Finish: Short-to-medium length. Brookside chocolate-covered fruits, especially goji berries and cherries.
Overall: I really would’ve thought Oloroso over PX, since there’s not the syrupy sweetness but this Rabbit Hole sherry cask bourbon has rather a balanced sweet and spice throughout.
