George T. Stagg Bourbon 2007 Review: Tasting Notes
Eye: Deep maple syrup. Thin bleeding rims and droplets studding the glass.
Nose: Familiar GTS profile for sure, flavor and power. Muted at first but only for a bit. Deep bourbon scents, long aged and rich. Red fruits open beautifully on the nose, sweet and juicy.
Palate: Holy f*** that’s hot. Bourbon in maple candies. Burnt brown sugar, cinnamon extract, fall pinecones. Plums, tart and juicy, open quickly behind the heat. Not as hot on the second sip. Barrel char, dark baking chocolate, Dutch cocoa. After the initial flames, dates and prunes develop into complex dark fruits. The heat sticks around, but the mouthfeel is deliciously hot, fruity, deep, dark, viscous, velvety and coating on every part of the palate. Nearly perfect.
Finish: Medium-long, heat is tolerably hot at this point and tongue-focused. All the flavors just last and last, especially the burnt maple and brown sugar.
Overall: Damn this is fine whiskey. The initial punch is a right hook to the tongue, but after that the bourbon power and flavors blossom into nuanced fruitiness and chocolate with a finish for days. One of the best whiskies I’ve ever tasted.
